Cracklin Cornbread

Breads

2 Tbsp bacon grease
1 Cup Self rising corn meal
1 Cup All-purpose flour
2 Tsp baking powder
1/4 Tsp baking soda
1 2/3 Cup buttermilk
2 each egg
1 Cup pork cracklins
1 Tbsp butter

For cracklin's = 1 (3.25-ounce) bag fried pork skins (cracklin’s)

Preheat oven to 350 degrees

In an 8-inch cast-iron skillet, place 1 tablespoon bacon grease and 1 tablespoon of butter. Place skillet in oven to preheat for 10 minutes.

In the work bowl of a food processor, pulse cracklin’s until coarsely chopped.

Mix dry; add wet, and remaining 1 tablespoons bacon grease. Stir in cracklins. Carefully spread batter into hot skillet.

Bake until a wooden pick inserted in center comes out clean, about 30 minutes, covering loosely with foil halfway through baking. Let cool in pan on a wire rack for 10 minutes.
